Wednesdays are usually late working days for Wolfgang.  So, I usually have time to cook something that requires more time and effort. Although, lately with the foot issue, my wonderful mom has been cooking for us. I’m going to try to post every now and then on Wednesdays of some fun food dishes.

The boys really love these fish eggs and they like various sushi rolls too. Since they love cucumbers, I decided to combine the two into a cucumber roll. Tophie eats the whole piece and also the entirety of the salmon roe nigiri, but Xandie picks out only the fish eggs and cucumbers. For a while Xandie would request to see pictures of the salmon roe nigiri and ask to have it for dinner, so I finally caved and ordered some to make at home. They’re picky eaters so I try to accommodate all reasonable requests. The poor nigiri seaweed pieces got a little soggy after sitting there for a while.
